The machines that make the soft, chewable ice people drive to a drive-through for. What they cost to run, how fast they really are, and which of their published numbers hold up.

Nugget ice is compressed flakes. A machine freezes a thin layer of ice crystals on the inside wall of a chilled cylinder, a motor-driven auger scrapes those flakes off and forces them through a die, and what drops out is a soft pellet full of trapped air. That trapped air is why you can chew it, and it is also why it melts faster than anything else in your freezer.
That single mechanism explains most of what is confusing about this category. It explains why nugget machines cost multiples of bullet machines, because an auger turning inside a refrigerated cylinder is an expensive assembly that a bullet machine does not have. It explains why they squeal when they are scaled, because the auger is working against a rougher, tighter wall. And it explains why the ice is the same whether you spend two hundred dollars or six hundred: every machine here does the same thing to the same water.
Not ice quality. The ice is identical. What genuinely differs across this category, in the order it will matter to you:

Two things in that table are worth pausing on. Frigidaire and NewAir publish a wattage; GE publishes only a current rating, so its cost figure is a ceiling we derived rather than a consumption number. And the Opal 2.0, the machine everyone recommends, has the highest electrical rating of the five.
Search for Opal specifications and you will find 24 lbs a day and 38 lbs a day, both attributed to "the GE Opal", often on the same page of results. Both figures are real and they belong to different machines.
The 2017 FirstBuild Opal manual (OPAL01) says 2.5 A and 24 lbs a day. The Opal 2.0 owner's manual says 3.0 A and 38 lbs a day. GE's public support specification page publishes the first set of numbers without naming a model, which is how the old figures keep attaching themselves to the current machine. Worth knowing before you go looking for it. No manufacturer here publishes a decibel rating, so we cannot tell you which machine is quietest and neither can anyone else without measuring it. No specification table we read includes a warranty term. And no manufacturer publishes an expected lifespan.
Those are real gaps. We would rather name them than fill them with numbers taken from other publishers, which is what our method page commits us to.
The ice bin is not refrigerated. On every machine in this section, ice melts and the meltwater drains back into the reservoir to be frozen again. While the machine runs the bin looks permanently full, because it keeps replacing what melted, not because anything is being kept cold.
